  • 1 x packet of GR Gourmet Tomato and Sweet Red Pepper Stuffing Mix (125g)
  • 250 ml Water
  • 2 x Beef Tomatoes
  • 2 x Large Flat Mushrooms
  • 2 x Peppers, halved and deseeded (red, green or orange)
  • Grated Mozzarella or Cheddar Cheese


  1. Preheat the oven to 180°C/Gas Mark 4.
  2. Place the stuffing mix in a large mixing bowl. Add 250ml of boiling water and stir thoroughly. Leave to stand until the water is absorbed then gently remix.
  3. Remove stems from flat mushrooms, slice the top of each tomato about a third of the way down and scoop out the inside then cut the peppers in half lengthways through the stalks and scrape out the seeds.
  4. Place the vegetables in an oven proof dish or baking tray, fill/top the vegetables with the stuffing mixture.
  5. Sprinkle with grated cheese of your choice and bake in the oven for 25 – 30 minutes.
