Slow Cooker Black Bean Soup

Black Bean Soup with Avocado & Tortilla chips

Shopping List

  • 1 x V and Easy Chilli Non Carne Sauce Mix
  • 1 x Large Red Onion, chopped
  • 3 x Tinned Black Beans, drained
  • 1 x Red Pepper, chopped
  • 1 x Yellow Pepper, chopped
  • 2 Carrots, chopped
  • 1-2 Jalapenos, seeded and diced (optional for heat)
  • 1 x Avocado, diced, to serve (optional)
  • Small Bunch of Coriander, to serve (optional)
  • 600ml Water

Method

  1. Add the beans and vegetables to your slow cooker pot.
  2. Blend the Chilli Non Carne Sauce Mix with the water. Add to the slow cooker pot and stir thoroughly.
  3. Cover and cook for 4 hours on HIGH or 8 hours on LOW or until the vegetables are tender and cooked through (keep covered during cooking, cooking times may vary between slow cooker models).
  4. Remove lid and stand for 5 minutes before serving.
  5. To serve, add a handful of diced avocado and coriander.

Top Tip – Serve with a sprinkle of tortilla chips for an extra crunch!
