Pulled Pork Wraps

Shopping List

  • 1 x Gordon Rhodes BBQ Style Pulled Pork Gourmet Sauce Mix
  • 1kg Pork (Leg or Shoulder)
  • 1tbsp Honey
  • 300ml Water
  • 2 x Red Pepper, sliced
  • 2 x Yellow Pepper, sliced
  • 1x bag of Mixed Leaf Salad
  • 8 x Flour Tortillas (or Gluten Free alternative)

Method

  1. Place pork into your slow cooker pot.
  2. Blend the Pulled Pork Sauce Mix with the water and add to the slow cooker.
  3. Cover and cook for 4 hours on HIGH or 8 hours on LOW or until the meat is tender and cooked through (keep covered during cooking, cooking times may vary between slow cooker models). If using an oven, heat to 150⁰C and cook in a covered, oven-proof casserole dish for 3-4 hours until pork is tender.
  4. Remove the pork and place on a chopping board. Use 2 forks to pull the meat apart until it is finely shredded. Place the shredded meat back into the sauce and stir in the honey.
  5. Allow the pork to cool for a while (you can pop it in the fridge to speed this along!)
  6. In the centre of the tortilla wrap, put a generous spoonful of the pulled pork in a line. Top with sliced peppers and a handful of mixed leaf salad.
  7. Tuck in either side of the wrap and roll up the tortilla.
  8. Slice the wrap into 4 equal pieces, making them easily shareable!
  9. Repeat for the remaining 7 tortilla wraps.

Top Tip – Pop them in a tight container to keep their shape and stop them unravelling! You can replace pork with Jackfruit for a vegan friendly option.
