Preheat the oven to 180 °C. Place the stuffing mix in a large mixing bowl. Add boiling water (250ml) and stir thoroughly. Leave to stand until the water is absorbed then gently remix.
Line a loaf tin with cling film and layer with the streaky bacon to cover the base, sides and overhang the edges.
Layer the stuffing mix into the bottom of the loaf tin, place the sausage meat on top. Press down firmly to ensure the tin is full and air pockets are expelled.
Fold over overhanging streaky bacon over the top layer of the stuffing loaf to encase and press firmly.
Chill to form for 30 min, then carefully tip the loaf from the loaf tin, place on a greased baking tray and remove cling film. Bake for 40-45minutes.
