Lancashire Hotpot - lamb stew with sliced potatoes in terracotta dish

Shopping List

  • 1 x Packet of GR Slow Comfortable Stew Sauce Mix
  • 450g Diced Lamb
  • 450g Diced Carrot & Swede
  • 1 x Large Onion, diced
  • 2 x Large Potatoes, thinly sliced
  • 2 Tablespoon Tomato Puree
  • 565ml Water

Method

  1. Start by dicing the carrots, swede, onion and leek and adding them to your slow cooker.
  2. Now add the diced lamb and tomato puree into your slow cooker pot.
  3. Blend the Slow Comfortable Stew Sauce Mix with water (565ml) and add to the slow cooker pot, stir all ingredients together thoroughly.
  4. Slice the potatoes and layer them over the top of the stew, overlapping slightly.
  5. Cover and cook for 4 hours on HIGH or 8 hours on MEDIUM until the meat is tender and cooked through (keep covered during cooking, cooking times may vary between slow cooker models).
  6. 5-10 minutes before serving, remove the lid and take the inside of the slow cooker out. Brush the potatoes with some butter and crisp under the grill of your oven for 5-10 minutes until browned.
  7. Allow to stand for 5 minutes before serving.

Top Tip – Serve with delicious greens, like tenderstem broccoli or asparagus.
