Butterfly a chicken breast and lay out on cling film on a chopping board. Flatten out using a rolling pin. Mix the stuffing mix with the boiling water. Spread a 1/4 of the stuffing over the chicken breast so they are both of about equal thickness. Spread the cranberry sauce over the top of the stuffing. Roll up the chicken from the longest side. Use the cling film to assist you with this. Transfer to a baking sheet and pin together using cocktail sticks. Repeat with the remaining chicken breasts. Bake in the oven for 20-25minutes. Once cooked through remove from the oven and stand for 5 minutes.
